Stuffed Peppers

About 6 servings

  • 16 oz, Ground Turkey
  • ½ medium yellow onion, diced
  • 1.75 cup, corn
  • 5 garlic cloves
  • 1 jalapeno pepper, diced
  • ½ cup of cilantro, chopped
  • 6 medium red peppers
  • ¼ cup of shredded mexiblend cheese
  • 1 ½ tablespoons Cumin
  • Salt & pepper
  • Teaspoon Paprika
  • Teaspoon Chili powder

Pre-heat oven to 350 degrees. Heat a pan with your choice of oil/butter (about a tablespoon). Once heated toss in your onions until translucent. Add ground turkey, garlic, jalapeno and spices. Once the turkey has cooked through add your corn and cilantro. Mix well together. While this is cooking through, cut the tops off of your red peppers and clean the insides. I like to use the tops for later dishes. For example, if I am making beans as a side dish for the week I’ll add the red peppers in there! After cleaning the red peppers, add the meat filling to each one. Distribute your cheese evenly on the top of each stuffed pepper then toss in the oven for about 20-25 mins.

I usually eat this with rice for some extra carbs & plantains! For plantains I buy them when they are yellow and gently bruised (some dark spots). I cut them into ¼ inch pieces. Heat up a saute pan, oil (your preference) pan, then cook on each side until brown! Add salt & pepper for taste
